Tips for the processing of frozen strawberries

Berries are considered a "superfood" due to their high concentration of bioactive compounds (fiber, phenolic compounds, vitamins, and minerals) and low-calorie content. In addition, scientific studies relate its consumption to various health benefits. They have been shown to maintain blood sugar levels, reduce oxidative stress, have anti-inflammatory effects, and prevent cardiovascular disease, among others. Therefore, it is not surprising that the agri-food industry seeks to incorporate berries in its formulations to improve them. Among the various technologies, freezing stands out.

1) Set realistic expectations

Strawberries have many varieties, and depending on where and how they grow, they will behave differently when being cut. Remember that there is not one single solution and setup that will fit all strawberry-cutting needs.

2) Test the cutting machine always in the production environment

It's important to estimate all aspects of the processing. Even under ideal circumstances, it is unrealistic to expect all perfect-shaped cubes out of a naturally spherical or irregular product.

3) The product and dice size will influence the results

Let's give an example. Dicing strawberries with a diameter of 45mm in 10x10x10mm dices; even with reasonably large strawberries for cutting, you would have 4 perfect and 10 imperfect cubes per slice, with a maximum of 4 perfect pieces per strawberry.

4) The way the fruit has been frozen is essential

Large blocks of frozen products sticking together will not yield a good result, whereas individual loose products will lead to better results. If a lot of ice is formed around the product, this will also show in the number of fines of the cut products.

5) The appropriate temperature for cutting depends on the sugar & water content

The higher the sugar value, the sweeter the liquid solutions. It's vital to check the actual temperature of the product at the moment it enters the cutting machine. When the strawberries leave the freezer but have to travel over belts for a few minutes before reaching the cutting machine, the temperature may have changed by a few degrees. Too-soft strawberries can not be cut properly. The strawberries should be uniformly tempered and frozen.

So yes, it is hard, but not impossible. With the right choice of strawberries, the right equipment, and some sound advice, you can succeed.
