IOT based quality monitoring mote for tomato during ripening and storage

An IOT based monitoring mote was developed to measure the concentration of total volatile organic compounds in storage chamber during tomato storage. The aim of the research is to correlate the TVOC release with ripening stages of tomato. The mote consists of sensors for measuring temperature, relative humidity (RH) and total volatile organic compounds (TVOC) concentration. It also consists of a wireless IoT system for transferring the collected data to the cloud network. The experiment was conducted in an airtight storage chamber with 5 kg of tomato sample for a period of 7 days. The monitoring mote senses the real-time temperature, RH and TVOC concentration for every 1 hour throughout the storage

The aim of the research is to correlate the TVOC release with ripening stages of tomato. The mote consists of sensors for measuring temperature, relative humidity (RH) and total volatile organic compounds (TVOC) concentration. The experiment was conducted in an airtight storage chamber with 5 kg of tomato sample for a period of 7 days. The monitoring mote senses the real-time temperature, RH and TVOC concentration for every 1 hour throughout the storage period.? The corresponding changes in total soluble solids (TSS) and firmness were also studied during ripening.The result reveals that the rate of release of TVOC in the storage chamber increased from 1.8 ppb/h to 12?ppb/h from unripened to ripened stage of stored fruit. Increase in TVOC concentration inside storage?chamber is due to the production of aroma compounds and ethylene gas during ripening. Fruit firmness?was decreasing and TSS content was increasing during ripening due to enzymatic degradation of?polysaccharides and production of simple sugars. Thus the release rate of TVOC is quantified and?correlated with the firmness and TSS of tomato. Firmness was observed to be in linear correlation with?the rate of TVOC release with R2 value of 0.9598.
