One of the most important takeaways from the workshop for us was the reminder that when it comes to fresh produce, "taste trumps everything." While a consumer may think twice before purchasing a piece of fruit with a blemish, the stakes are raised considerably when a consumer has a negative eating experience. It can take months for a person to try a commodity again after theyve been disappointed by its taste, and thats if they give it another shot at all. So, what can growers, packers, and retailers do to ensure that their produce is going to taste great when it finally gets into the hands of the eater? As we learned from the UC Davis Postharvest Team, the answer is that we can, and must, do a lot. From understanding the stages of fruit development and the difference between climacteric and non-climacteric fruits, to measuring ethylene and managing ripening through temperature adjustments, achieving optimal fruit quality requires the participation of every person along the cold chaineven the consumer.
