During 18 months, they compared the product range of FAM with that of other suppliers of industrial food cutting machines, cutting heads and cutting blades for chips. The results were conclusive: on all parameters, the slices produced with FAM?s Centris SureSet cutting head were superior. The slices remain smooth due to the long lifetime of the stainless steel blades, even after slicing potatoes for more than 12 hours. That means that there is less starch loss and less oil uptake than is observed with carbon blades which go blunt way earlier. When comparing the amount of small parts (smaller than 2cm), the SureSet produces 50% less. Also the slice thickness is so consistent and equal that a readjustment of the slice thickness becomes unnecessary with the SureSet 16 cutting heads. In fact, the results were so good that the processor decided to gradually switch all their flat line cutting heads to the SureSet 16, even though there was no budget available. Since the SureSet 16 cutting heads fits on all common centrifugal slicing machines, that was the most logical next step, as calculations showed that the payback of the investment was so fast that it was no good waiting for the next budget round.
