Raspberries at temperatures of 0 and 5?C count on a commercial life of 12 and 10 days respectively

The objective of this work was to evaluate the effect of cold storage on post-harvest conservation of 'Autumn Bliss' raspberries stored at 0, 5, 10 and 15 ? 1 ? C and 90 ? 5% HR for 12 days. Respiratory activity, ethylene production and weight loss were evaluated daily while firmness, total titulable acidity, pH, total soluble solids, pectins, anthocyanins and quercetin every 2 days. Excepting total soluble solids, the remaining analyzed parameters were affected by the temperature and storage time. According to the results, the lowest firmness and weight losses, as well as the maintenance of titratable acidity, ascorbic acid content, anthocyanins, quercetins and better appearance, were observed at the lowest temperatures (0 and 5 ?C). The raspberries stored at 0, 5, 10 and 15 ? C were kept in suitable conditions for commercialization for 12, 10, 4 and 2 days respectively.
