A minimum quality index for the ?ready to eat? mango based on dry matter

A minimum quality index and a ripening program are essential to assure increased mango consumption and expansion of the market in the USA. Our previous work reported that dry matter (DM) does not change during mango postharvest handling and it is correlated well with all of the nonstructural carbohydrates and other solids. In this work, we demonstrated that ripe soluble solids concentration (RSSC) and DM quality attributes segregate consistently with consumer acceptance for several imported mango cultivars from different origins. Using ?Ataulfo? and ?Tommy Atkins?, currently the two most important imported mango cultivars, we revealed that there is a significant and high correlation (r = ~0.95) between DM measured destructively at harvest or arrival and RSSC. Furthermore, a high and significant correlation (r=0.98) was also obtained between DM measured at harvest and DM of the ripe mangos (?Ready to Eat?). Similar high levels of associations were detected between DM and RSSC when DM was measured nondestructively using the near infrared spectrometer ?NIRvana? sensor. Highest correlation coefficients were found between the nondestructive DM and RSSC for ?Ataulfo? (r=0.91) and ?Tommy Atkins? (r=0.78). The proposed minimum quality index (MQI) for several mango cultivars, based on ?in store? consumer tests and practical application, is the minimum DM at harvest or arrival. This MQI can be used to predict the final RSSC and potential consumer acceptance for mango cultivars marketed in USA. The option to measure this MQI, based on DM, nondestructively will support the establishment and enforcement of this MQI.
