Carbon dioxide enrichment in greenhouse grown peaches improves the flavor

To exploit the impact of carbon dioxide enrichment (CDE) on the development of flavor quality of peaches grown in a greenhouse, peach trees were enriched by carbon dioxide during the shortage period. Sugar content, changes in organic acids, and emission of volatiles, as well as consumer acceptability were investigated at harvest and during postharvest ripening at 20?C. Higher levels of sucrose, lactones, and a low level malic acid were found in fruit treated with CDE than in the controlgroup. Compared to the control, fruit treated with CDE were relatively well accepted by consumers, due to better flavor. The main carbon stream of pyruvic acid and precursors of volatile compounds, levels of linoleic acid, and linolenic acid were increased significantly by CDE. These results suggest that CDE can markedly improve the flavor quality of peach fruit and consumer acceptance of greenhousegrown peaches.
