Healthbeneficial compounds could be increased significantly and freshness better retained by UV-B and -C treatments of blueberry after harvest

Three types of ultraviolet lights (UV-A, -B, or -C) were applied on highbush blueberry (Vaccinium corymbosum L., cv. Duke) fruits to investigate the effect of each UV light type on the quality and antioxidant capacity during cold storage. The fruits at commercial maturity stage were treated with UV-A, -B, or -C at 6kJ/m2 for 20 min, packaged in polypropylene containers, and stored for 28 days at 0?C. The fruits at commercial maturity stage were treated with UV-A, -B, or -C at 6kJ/m2 for 20 min, packaged in polypropylene containers, and stored for 28 days at 0?C. There were great increases of individual anthocyanins, delphinidin 3-galactoside and delphinidine 3-glucoside after the light treatments in the UV-B and -C treatments. The UV-A had little effects. The contents of total phenolics, anthocyanins, flavonoids of the fruits treated with UV-B and -C were 200 mg/100 g fresh weight, 2.4 mg/g, and 140 mg/g respectively, approximately 30% higher than those treated with UV-A and the control. Weight loss and decay were significantly decreased during storage by UV-lights. The increase of soluble solids content and reduction of titratable acidity were delayed but the firmness of fruits was not affected by the UV treatments. The antioxidant activities of the fruits treated with UV-B and -C were always higher than those of UV-A during storage. Our results indicated that the contents of healthbeneficial compounds could be increased significantly by UV-B and -C treatments after harvest and freshness of the treated fruits could be retained higher during cold storage. On the contrary, the UV-A treatment had no positive effects on increasing and subsequent maintaining of the quality and antioxidant activity in blueberry fruits. ?
