Significant increases in sucrose content, the principal sugar in raw roots, occur in multiple cultivars of orange-flesh sweetpotatoes with decreasing storage temperature from 15? to 4?C. Increases in the two main monosaccharides, fructose and glucose, also occur with decreasing storage temperature, but to a lesser extent than sucrose. Low atmospheric oxygen storage (3-5%) significantly enhances sucrose synthesis compared to ambient atmospheres, but decreases the formation of fructose and glucose. Increasing atmospheric CO2 concentrations inhibit sucrose synthesis, but increase the formation of glucose and fructose. Sweetpotato roots are responsive to manipulation of individual sugar content by temperature and atmospheric gas composition throughout a year-long storage period. Alteration of the storage atmosphere allows for manipulation of sweetpotato carbohydrate metabolism, flavor, and agro-processed product quality. ?
