On cherries, tomatoes, blueberries and grapes, the classical methods to assess the hardness of the fruit flesh, such as the penetrometer, do not give interesting results, according to Turoni. "With the durometer, however, we obtain a more realistic evaluation. The latter simulates the pressure of a finger on the flesh without piercing it. Its application to grapes can produce an index that can also be linked to the crunchiness of the fruit, which is highly appreciated by consumers". “In addition to the sugar degree, a parameter traditionally measured on grapes, we can therefore quickly assess the firmness of the pulp and, thanks to the acidimeters that have been developed in recent years, we can also quickly ascertain the strength of acids".
